1 Cup Unsweetened Shredded Coconut
1/3 Cup Raw Honey or Agave - Melted
1/2 Cup Almond Butter
1 1/2 Cups Raw Sesame Seeds
1/2 teaspoon Vanilla Extract
Prepare an 8x8 inch dish by lining it with parchment paper that sticks out over the sides so that you can pull it out after it has cooled. In a large bowl combine coconut and sesame seeds. Melt the almond butter and honey together in a sauce pan over medium heat or in a microwave for 30-45 seconds. Add the vanilla extract to the almond butter/honey mixture and pour it over the coconut/sesame seeds to combine. Press into the prepared 8x8 inch dish and bake at 300 for 20 minutes. Once the edges begin to brown remove the pan from the oven and let it cool completely before cutting into bars. Store the Mini Almond Sesame Bars in an air tight container at room temperature or in the refrigerator.
